Cooking tip: Tenderize your octopus!

Octopus is a seafood with real culinary appeal that works well in many recipes. It’s delicious, to be sure, but it does require a bit of preparation beforehand.
In fact, regardless of how it’s cooked, the octopus meat must be tenderized!

Here are a few ways to do it:

In the freezer: this will break down the fibers that make the meat chewy;

soak it in gently simmering water: the goal is always the same—to tenderize the meat. Holding it by the top, simply dip its tentacles three times, then continue cooking;

By pounding: This method is traditional in southern countries. The octopus meat is pounded against a rock or with a meat tenderizer (or similar tool) to break down the fibers and make the meat more tender.
