The Founding Aquariums

Nausicaá, the National Sea Center, is a science education center that raises awareness of the connection between humanity and the ocean.   

Nausicaá is a unique educational experience where visitors can marvel at the beauty of the marine world, gain an understanding of environmental issues, and, above all, learn to love and protect the ocean.    

The Acquario di Genova is an educational, scientific, and cultural center dedicated to raising and strengthening awareness of the sustainable relationship that humans and the sea can maintain.  Each year, this aquarium welcomes more than 1,300,000 visitors from Italy (mainly from the north and center of the country) and from most European countries, with a small percentage of these visitors coming from other continents. 

The Finisterrae Aquarium is a science center dedicated to raising public awareness of marine issues and promoting environmental education. Its primary goal is to promote ocean conservation by enhancing knowledge and inspiring emotion. It is managed by the Scientific Museums of A Coruña, which are under the jurisdiction of the city’s municipal council and of which it is an integral part

Regional coordinators

The National Center for the Sea coordinates the development of recommended lists for the Channel/North Sea coastline, from Dunkirk to Cherbourg. Nausicaa is also home to the Mr.Goodfish team, which is responsible for compiling seasonal lists for all coastal areas, promoting and communicating the program nationwide, managing members, and fostering the Mr.Goodfish community. The team consists of: 

  • Justine LELEU-DELETTRE, Program Officer at Mr.Goodfish 
  • Margaux BOUSSEMAERE, Project Manager at Mr.Goodfish (upstream sector) 
  • Paul RUCHON, Project Manager, Mr.Goodfish (downstream sector)

Represented by Jérôme NICOL, the company organizes the committees responsible for compiling lists for the Brittany/Atlantic coast. Since October 2021, SASU CADK and the Mr.Goodfish program have been collaborating to objectively raise awareness among the public and industry professionals about the conservation of fishery resources. It also facilitates and fosters exchanges among producers, processors, purchasing offices, restaurateurs, fishmongers, and others by bringing professionals together every three months to review the various species recommended by Mr.Goodfish. 

Since the beginning of 2025, Planet Ocean Montpellier has been coordinating the development of seasonal lists of sustainably sourced seafood for the Mediterranean. 

Drawing on its expertise and commitment to the conservation of marine resources, Planet Ocean Montpellier works closely with the Mr.Goodfish team, as well as with scientific experts and local industry professionals, to identify the aquatic species that should be prioritized each season. By incorporating Mr.Goodfish’s sustainability criteria, Planet Ocean Montpellier actively contributes to promoting more responsible consumption and raising public awareness of the challenges of preserving marine ecosystems in the Mediterranean.

Planète Mer is a nonprofit organization. It works to protect marine life and the human activities that depend on it. Its mission is to ensure the long-term viability of marine resources and jobs through the sustainable use of the marine environment, and to rethink human activities in order to protect, manage, or restore the ecosystems that sustain them.

The International Union for Conservation of Nature is the largest and oldest global environmental organization in the world. Its role is to influence, encourage, and assist societies around the world to conserve the integrity and diversity of nature and to ensure that the use of natural resources is equitable and ecologically sustainable.

Ifremer conducts research, drives innovation, and provides expertise to protect the ocean, manage its resources responsibly, and share marine data.

Mr.Goodfish works with the entire industry—which is committed to preserving marine resources by offering their customers more sustainable and seasonal species—including fishermen, fish auctions, fish wholesalers and distributors, processors, retailers, food service companies, partner restaurants, schools, caterers, fishmongers, and supermarkets.

“When I opened the restaurant ‘Auguste,’ I became interested in what seemed new to me at the time: the fragility of marine resources. It wasn’t just about choosing good fish, but about buying it wisely. I was involved in its development and eventually became a sponsor of the Mr.Goodfish program. Mr.Goodfish is the ideal tool. It’s clear, logical, and simple (…).” 

Les Halles METRO, a leader in self-service wholesale, was the first food wholesaler to sign a partnership agreement with Nausicaa to promote and implement the Mr.Goodfish initiative for sustainable fishing in its warehouses. Since 2012, the 99 French locations have been showcasing species recommended by Mr.Goodfish to their customers and encouraging them to join the program. 

To raise awareness among the public and industry professionals and ensure a future for endangered species, Auchan partnered with Mr.Goodfish in 2018.
Initially, the company focused on farmed species, and since early 2020, it has also committed to wild species. Auchan has trained its employees and suppliers on sustainable and seasonal species and offers its customers Mr.Goodfish recommendations both at the counter and in packaged products. 

Pour de Bon offers direct-to-consumer sales from the finest producers, farmers, artisan butchers, charcutiers, grocers, winemakers, market gardeners, fishmongers, and caterers from all across France. 
They are rigorously selected based on official quality criteria (Meilleurs Ouvriers de France, AOP, AOC, Organic or AB certifications, Collège Culinaire de France, medalists from the Concours Général Agricole, etc.), but also—and more broadly—based on sustainable and artisanal production practices that respect the environment. 

Since 2018, Bureau Veritas has been responsible for auditing all professionals participating in the Mr.Goodfish initiative. This partnership ensures that all program members comply with the Mr.Goodfish guidelines. 

InnovaFeed produces a new source of protein derived from insect farming and intended for use in feed for farmed fish. In the wild, certain species such as trout and salmon feed partly on insects: this is therefore a return to their roots for these fish, which are excellent fly-catchers! Insects contribute to the growth of sustainable aquaculture, which reduces pressure on our ocean resources for high-quality fish today and tomorrow.

Euro-Toques remains deeply committed to the preservation of seafood products and will once again organize a special week in 2018 at Euro-Toques member restaurants focused on whiting.  “Our role as a lobbyist in Brussels also allows us to relay information to the European Commission through our Euralia Office, which handles all our monitoring activities. Euro-Toques: 250 chefs at your service in France and 2,000 across Europe.” 

The UMIH is the leading professional organization for independent cafés, hotels, restaurants, and nightlife establishments in France. Formed through the merger of several employer organizations, the UMIH represents, advocates for, and promotes independent professionals in the hotel, restaurant, bar, café, brasserie, nightlife, and seasonal sectors across all regions and departments of France. 

This alliance brings together aquariums with programs similar to Mr. Goodfish, such as OceanWise at the Vancouver Aquarium (Canada),  Seafood Watch at the Monterey Bay Aquarium (USA), MarViva in Costa Rica, etc.
It was created with the goal of sharing their knowledge, experiences, communication tools, and networks. 

The National Association for the Defense of Consumers and Users (CLCV) is represented on the committees responsible for compiling Mr.Goodfish’s seasonal lists. It is through the collective efforts of the entire fishing industry and consumers that we will be able to safeguard the fishing economy and continue to enjoy seafood in the future.

The Mr.Goodfish program is a partner of the AQUIMER competitiveness cluster.
Established in 1999 and designated a National Competitiveness Cluster by the French government in 2005, AQUIMER serves as a resource for businesses, scientists, and training centers.

Today, there is not just ONE form of agriculture, but MANY forms—diverse and varied—that coexist. Alongside conventional and organic agriculture, there is a third way, in which producers from every agricultural sector work toward the same goals of environmental, economic, social, and societal responsibility. It is within this momentum that the Association Bleu-Blanc-Cœur, the Association Demain la Terre, the CRC® Sector, and the Association Vignerons Engagés are each active within their respective sectors. Together, these four major players in French agriculture co-founded the Collectif de la Troisième Voie des Filières Agricoles Responsables. They were joined in 2020 by the Mr.Goodfish program to represent the seafood sector. 

Le Tour des Terroirs is an association dedicated to promoting the culinary and cultural potential of the regions while highlighting local expertise and products. To achieve this goal, the association identifies, informs, brings together, and connects all professionals who contribute to ‘good eating’.” 

Drawing on expertise, products, traditions, recipes, and professionals in the field, the National Academy of Cuisine has always promoted gastronomy and kept it alive by supporting young people and the education of culinary trades—whether in cooking or service—and has been chaired by Éric Vandevelde since January 2025. It has also forged its identity through the organization of numerous events that shape the landscape of the culinary arts and through its participation in many culinary festivals… 

The Baie de Somme Zéro Carbone association, founded by tourism professionals in 2009, is committed to preserving the Baie de Somme, a natural gem. Our members are committed to promoting responsible tourism and making their professional activities more sustainable and environmentally friendly. Through concrete actions, members of the BSZC network are committed to: 

  • Act in accordance with the association’s charter, share best practices and opportunities, and draw on collective intelligence. 
  • Engage in research by forming partnerships with universities, supervising master’s-level internships, and organizing conferences open to the public. 

Organize projects and events to raise public awareness and foster cooperation among local stakeholders, particularly to expand the reach of local food systems and eco-mobility. 

Disciples Escoffier International was founded on April 21, 1954, in Nice by Jean Ducroux, the city’s head chef and a former student of Auguste Escoffier.
Due to its size, the association decided to organize itself into delegations. There are a total of 46 delegations, each with its own management structure, but they are interconnected and overseen by the Magistère of Disciples Escoffier International, located in Villeneuve-Loubet, France, the birthplace of Auguste Escoffier. 
Despite the independence of these delegations, they remain united by the same strategy and guidelines, organized by the association’s headquarters in France. Nicolas Sale, the current international president of the Disciples Escoffier, has defined “tradition, creativity, innovation, solidarity, and friendship” as the foundation of the association’s commitment. Members from around the world share and teach their knowledge across borders and continue to embody “the Escoffier spirit.”

Active on the international stage, the Prince Albert II of Monaco Foundation (FPA2) aims to bring together scientists, policymakers, business leaders, and members of the public around the vital goal of preserving the oceans and the Earth for our future. The Foundation’s sustained efforts have led to encouraging successes, whether in the conservation of endangered species or in improving the living conditions of rural communities through the implementation of new sustainable and ethical solutions.
