The Mussel broth

A little sunshine on our plates with this springtime recipe: a mussel dish typical of the Catalan coast, perfect as an appetizer! For the flavors to really meld together, we recommend preparing this dish the day before.

Ingredients

  • 2 liters of mussels (500 g of meat)
  • 2 nice garlic cloves
  • Olive oil, parsley, dill (to taste)
  • Salt, pepper

Preparation:

Rinse the mussels under clean water.

Cook them over high heat in a saucepan with a little water.

The most tedious step: remove each mold from its shell and let them cool.

In the meantime, prepare the marinade: finely chop the garlic and mash it with the oil. Add the rest of the seasonings to taste.

Combine the marinade with the mussels in a sealed container and let sit. Serve chilled.
