Ingredients

  • 8 sea bream fillets
  • 800 g of chanterelles
  • olive oil
  • Butter, parsley, and 8 shallots
  • Salt, pepper

Preparation

Scrub the chanterelles, then rinse them two or three times under running water. Drain them, then cook them in a very hot skillet with olive oil until they release their liquid. Drain them again in a colander. Sauté them in a skillet with a knob of butter, parsley, and finely chopped shallots.

Season the sea bream fillets with fine salt, then sear them in a skillet for 6 to 7 minutes on the skin side.
