Ingredients

  • 8 smoked herring fillets
  • 1 onion
  • 10 cl of rice vinegar
  • 50 cl of crème fraîche
  • 2 Granny Smith apples
  • The juice of one lemon
  • salt, pepper

Preparation

Rinse and pat dry the herring fillets. Cut them into small cubes and set them aside in a bowl with the chopped chives.

Peel and finely chop the onion. Combine the vinegar, cream, and minced ginger. Season with pepper. Mix everything well. Pour the sauce over the diced herring.

Wash the apples and cut them into thin strips, leaving the skin on. Season the apple strips with lemon juice and chives.

Arrange the seasoned herring cubes in a glass and top with the julienned apples. Garnish with chives and serve. Enjoy!
