Ingredients
- 175 g split peas
- 65 g butter
- 1 bouquet garni
- 75 cl of white chicken stock
- 10 cl of crème fraîche
- 100 g of mild herring fillet, finely diced
- For the aromatic garnish: 75g of green leeks, 25g of thinly sliced onions, 10g of minced garlic, 35g of smoked bacon
Preparation:

To prepare the cream sauce: Sauté the aromatic mixture in butter. Add the split peas. Let them cook. Once cooked, add the cream and blend. Adjust the seasoning.

To make the mild herring cappuccino: Steep the herring fillets in crème fraîche. Strain, then pour into the siphon.

Assemble the dish by placing a few cooked split peas at the bottom of the glass and setting them in the jelly. Arrange the finely diced mild herring. Pour in the warm cream sauce. Top with the herring cappuccino. Enjoy!
