Ingredients for 10 servings:

  • 10 scallops - 1 tablespoon olive oil - Fleur de sel, pepper
  • Mandarin paste: 4 organic mandarins - 100 g sugar - 15 cl water
  • 1 Granny Smith apple - 10 wooden skewers

Preparation

Mandarin paste - Wash the mandarins and cut them whole into small 0.5 cm cubes. In a saucepan, simmer the mandarin cubes, sugar, and water, covered, for 40 minutes over medium-low heat (maximum 5). Blend the mixture until smooth. Set aside. (This marmalade will keep in the refrigerator for 15 days.)

Cooking Scallops - Heat a skillet, add a drizzle of oil, and arrange the scallops in the pan. Cook for 1 minute on one side and 1 minute on the other, at most.

Plating - Arrange the scallops on a serving platter, then season with salt and pepper. Use two small spoons to form a small quenelle of mandarin paste. Place a quenelle of paste on top of each scallop. Add a thin slice of Granny Smith apple for freshness. Serve with wooden skewers. Enjoy your meal!
