Member of the Month: Jackie Masse

I am the head chef at the Hôtel la TERRASSE in Fort Mahon-Plage on the Picardy coast in the Hauts-de-France region, facing the sea and ideally situated between the Bay of Somme and the Bay of Authie. To supply both dining areas—the panoramic restaurant “Le Homard Gourmand” and the brasserie “Les Jardins de la Terrasse”—I had to be careful in my choices and ensure a diverse selection of fish to prepare. I met the “Mr.Goodfish” team, and we immediately embraced the project.

Mr.Goodfish is an excellent day-to-day partner for the business. Thanks to the recommendations board located at the restaurant entrance and in the kitchen, it’s the ideal tool for my team, as well as for the young trainees and myself—especially during menu proposal meetings with customers.

More than just a partner, it’s a philosophy of sustainable consumption and, of course, cooking with seasonal ingredients. It’s pure joy!

Jackie MASSE, Chef at “Le Homard Gourmand” restaurant in Fort-Mahon Plage.

These dark clusters are nothing other than living organisms: mussels. In France, these bivalve mollusks can be sold either as wild-caught specimens or as farmed ones. Wild, common, and Mediterranean mussels (Mytilus […]
