
“I am the head chef at the Hôtel la TERRASSE in Fort Mahon-Plage on the Picardy coast in the Hauts-de-France region, facing the sea and ideally situated between the Bay of Somme and the Bay of Authie.To supply both dining areas—the panoramic restaurant “Le Homard Gourmand” and the brasserie “Les Jardins de la Terrasse”—I had to be careful in my choices and ensure a diverse selection of fish to prepare.
