Member of the Month: Potel and Chabot

Last April, we were delighted to welcome the caterer Potel&Chabot to our team.

Before we explore what motivated them to join us, let’s learn a little more about them.

Potel et Chabot is committed to a policy of responsible sourcing for its food products. Developing and promoting the procurement of seasonal products is one of the core principles of this policy. It was therefore only natural that they learned about and joined the Mr.Goodfish program, which allows them to structure their approach to respecting seasonality in their seafood purchases.

We asked Christie Duret, fresh produce buyer, which species, among those recommended by the program this fall, she considered the star of the season and how to showcase it in the Potel & Chabot style; here is her response:
“We’re in the heart of scallop season, and we feature this iconic holiday dish in several of our recipes. Eaten raw as a tartare, scallops pair perfectly with citrus or exotic fruits like passion fruit and lychee—which are also in season!”
