COFIMA: A Company’s Vision

In this newsletter, we’ve decided to introduce you to one of the long-standing, family-owned businesses in Capécure (Boulogne-sur-Mer): SN COFIMA.

Led since 2016 by Romain Lennelle, COFIMA has been providing its clients with expertise and values unique to the company since 1976, which have enabled it to endure and grow over the years.

On Monday, November 20, we were welcomed by Stéphanie CRESSON, business development coordinator, who gave us a tour of the company.

During our discussions, her passion and deep respect for seafood products were evident, with the goal of fully satisfying their customers. For the company, a product’s value also lies in the relationship it fosters with people. Indeed, COFIMA has deliberately chosen to maintain its expertise and the quality of hand-filleting. This decision allows them to closely align with the needs of restaurant owners and preserve traditional craftsmanship.

The company learned about the Mr.Goodfish program through restaurateurs participating in it. Joining the program was a no-brainer!

One of Stéphanie’s signature species is Mr.Goodfish pollock.

Cooking it couldn’t be simpler: all you need is a nice, skin-on fillet. Cook it skin-side down and season with a five-berry blend, onion, and lemon slices to add flavor.

For the business development coordinator, it’s important to highlight the nutritional benefits of fish through simple recipes that showcase it.

Cooking fish simply helps demonstrate that it is an accessible, easy, and quick option.
