Description

Elongated and streamlined body, typical of salmonids. Characterized by a pink longitudinal band with iridescent sheen (the rainbow) along the sides. The body is generally blue-green or olive on the back, with silvery sides. Numerous small black spots dot the body, including the dorsal and caudal fins (unlike the brown trout, whose tail has few spots). In aquaculture, it is generally harvested at around 30–40 cm (fillet), but specimens raised in the sea or in large lakes can reach 120 cm and weigh up to 25 kg. Opportunistic and carnivorous. In aquaculture, it is fed an extruded pellet diet composed of fish meal, oils, and vegetable proteins.
Habitat
Anadromous species (lives in the sea and spawns in rivers) or strictly freshwater. It prefers clear, cool waters. Farm-raised: This is the most widely farmed trout species in the world. Freshwater farms: Raised in ponds or raceways (fast-flowing channels). Saltwater Cages: Steelhead are raised in circular cages in the open sea, simulating their migratory life cycle. Its optimal temperature range is between 10°C and 18°C. It is more resistant to high temperatures and intensive farming conditions than brown trout (Salmo trutta).
Distribution
Introduced to at least 82 countries for aquaculture and fishing. It is found on every continent (except Antarctica). Major production areas: Turkey, Iran, Chile, France, Italy, and Norway (for the marine form) are among the world’s largest producers.
