Description
Body is elongated and streamlined. Highly variable depending on the habitat. Generally, the back is olive-brown, the flanks are lighter (yellowish) and peppered with black spots, often including red spots encircled by white (a typical characteristic of the fario form). In farming, the coloration may be duller or greyer depending on the selection. Presence of an adipose fin (a small fleshy fin between the dorsal and caudal fins), often edged with red in juveniles. Size: Max 140 cm (commonly 40–80 cm). In farming or lakes, it can exceed 100 cm and reach more than 20 kg. Carnivorous and opportunistic. Juveniles feed on insects and crustaceans. Adults become piscivorous (feeding on other fish). In farming, they are fed with pellets rich in marine proteins and lipids.
Habitat
Natural Environment: Freshwater, brackish, or marine species (depending on the form). It requires cool, well-oxygenated, and high-quality waters. Farming (Farm-raised): Pond/Tank culture, raised in concrete tanks or raceways supplied by rivers or cold springs - Cages: Sea trout are raised in floating cages at sea or in large, deep lakes. Temperature: The optimum growth temperature is between 12°C and 16°C. It has a low tolerance for water temperatures exceeding 20°C.
Distribution
Naturally distributed across Europe, North Africa (Atlas Mountains), and Western Asia, ranging from Iceland and Norway to Afghanistan. Major Farming Areas: Europe remains the primary production area (France, Italy, Spain, Turkey, and Norway for the marine form).
