Description

It is a fish with a spindle-shaped, hydrodynamic, and powerful body. It has a small adipose fin between the dorsal fin and the tail, a characteristic feature of salmonids. The back is blue-gray or greenish, the sides are silvery, and the belly is white. It has small black spots, often X-shaped, mainly above the lateral line. In aquaculture, they are generally harvested when they reach 3 to 6 kg. In the wild, some individuals can exceed 1.20 m in length and weigh over 30 kg.
Habitat
In aquaculture: Salmon are born in hatcheries (freshwater). Once they reach the "smolt" stage (adaptation to seawater), they are transferred to large circular floating cages located in fjords or sheltered bays out at sea.
Distribution
Aquaculture: Production is concentrated in countries with cool, deep coastal waters. The world’s leading producers are: Norway (the global leader), Chile (although the species is not native there), Scotland (United Kingdom), Canada, and the Faroe Islands.
