Ingredients serving 2
- 1 red gurnard, already filleted
- Jarred monkfish liver
- 4 slices of sourdough or country bread
- 1 lemon
- Seasonal herbs (sorrel, tarragon, ...)
- Sea salt flakes
Preparation :
Step 1 :
Slice the red gurnard fillet from the back toward the outside
Step 2 :
Toast the bread
Step 3 :
Spread the monkfish liver on the slice of bread like butter
Step 4 :
Cover the toast with pieces of red gurnard
Step 5 :
Top with the herbs, a squeeze of lemon juice and fleur de sel
