Meunière-style brill steak, fondant potatoes and watercress

Ingredients for 4 servings

  • 3.3lb of brill
  • 4.4lb of Charlotte potatoes
  • Garlic, shallots
  • 9oz of butter
  • 1 bunch of warercress
  • Lemon, white wine

Preparation :

Step 1:
Prepare the brill steak as shown in the video
Step 2:
Cut the potatoes and cook them in plenty of sizzling butter
Step 3:
Blanch the majority of the watercress bunch in water, then blend it with olive oil and salt to create a coulis
Step 4:
Cook the brill steak meunière style
Step 5:
Deglaze the meunière butter with white wine to create a sauce
Step 6:
Arrange the brill steak on an oval serving dish and the sides on a plate with the coulis and a few watercress shoots.
