Ses inspirations sont ancr\u00e9es dans sa famille depuis des g\u00e9n\u00e9rations\u00a0: sa grand-m\u00e8re Mariette, v\u00e9n\u00e9zu\u00e9lienne a v\u00e9cu en France pendant quelques ann\u00e9es. C\u2019est ici qu\u2019elle s\u2019est initi\u00e9e \u00e0 la cuisine de l\u2019hexagone. De retour dans son pays d\u2019origine, elle a transmis cette passion aux g\u00e9n\u00e9rations suivantes jusqu\u2019au Chef Alfredo MARTIN.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-10921\" src=\"https:\/\/www.mrgoodfish.com\/wp-content\/uploads\/2021\/11\/Restaurant-Mariette-300x300.jpg\" alt=\"\" width=\"254\" height=\"254\" \/><\/p>\n<p style=\"text-align: justify;\">C\u2019est en 2002 que le futur chef entreprend alors sa formation dans le domaine culinaire \u00e0 Lyon. Puis, c\u2019est en 2010 qu\u2019il ouvre le Restaurant Mariette \u00e0 Paris en honneur \u00e0 sa grand-m\u00e8re.<\/p>\n<p style=\"text-align: justify;\">Alfredo MARTIN a connu le <a href=\"https:\/\/www.mrgoodfish.com\/especes\/\" target=\"_blank\" rel=\"noopener\">programme Mr.Goodfish<\/a> lors d\u2019une assembl\u00e9e nationale de l\u2019association de chefs <a href=\"https:\/\/www.eurotoques.fr\/\" target=\"_blank\" rel=\"noopener\">Euro-Toques France<\/a> dont il est un membre actif. L\u2019amour pour les produits frais et de qualit\u00e9, le respect du cycle de la nature, ou encore la durabilit\u00e9 des approvisionnements sont autant d\u2019engagements qui font partie de sa philosophie. Ils se refl\u00e8tent \u00e0 la fois dans sa cuisine mais aussi dans ses actions au quotidien. Sa collaboration avec le programme Mr.Goodfish lui permet d\u2019\u00eatre accompagn\u00e9 sur le choix du bon poisson gr\u00e2ce \u00e0 <a href=\"https:\/\/www.mrgoodfish.com\/mr-goodfish-2\/les-recommandations-mr-goodfish-pour-la-peche-2\/recommandations-de-la-saison\/\" target=\"_blank\" rel=\"noopener\">la liste de recommandations saisonni\u00e8res<\/a>.<\/p>\n<p style=\"text-align: justify;\">Le quotidien d\u2019un chef \u00e9tant une course contre la montre, Mr.Goodfish lui permet de recevoir facilement les bonnes recommandations au bon moment. En s\u2019associant avec cette d\u00e9marche, il peut facilement sensibiliser ses clients et les initier \u00e0 la consommation responsable des produits de la mer.<\/p>\n<p style=\"text-align: justify;\">Une des esp\u00e8ces qu\u2019il recommande pendant la saison automnale est <a href=\"https:\/\/www.mrgoodfish.com\/espece\/baudroie\/\" target=\"_blank\" rel=\"noopener\">la lotte<\/a>. Une id\u00e9e recette pour la pr\u00e9parer\u00a0?
